Following the chef of La Tradizione’s win for the best pizza in metropolitan France, another jewel of Italian gastronomy is being celebrated in Bordeaux. Ivan Alliata, chef at the Monzù restaurant in Grands-Hommes, was crowned French pasta champion in the “dry pasta” category. Great news for the taste buds of Bordeaux residents who love Italian cuisine!
From Palermo to the title of French PastaChampion

On April 2, at the Snack Show in Paris, Ivan Alliata prevailed over nine contestants from across France to win the French Pasta Championship in the “dry pasta” category. It was his creation, named Au Soleil de Marsala, that won over the jury. Behind this evocative name lies a masterful reinterpretation of a classic: pasta with tomato sauce. The dish combines linguine flavored with Sicilian citrus fruits with a tomato sauce prepared in a Gran Moravia cheese wheel flambéed with Marsala. A crumb topping made with citrus fruits and oregano adds the final textural touch. It’s enough to make your mouth water!
Originally from Palermo, the chef grew up in a family where cooking played a central role. His Bordeaux adventure began in 2019 when he joined the Monzù team upon the opening of the brand’s very first location.
Monzù: Italy, Bordeaux-style

Since its opening, Monzù has established itself as one of the must-visit Italian spots in downtown Bordeaux. With three locations now, the restaurant offers a culinary journey that begins with the choice of its name. “Monzù” refers to the 18th-century Neapolitan chefs trained in the French culinary tradition and employed by the aristocracy of southern Italy. It is a heritage the group proudly celebrates through a cuisine that blends Italian traditions with French influences.
On the plate, Neapolitan pizza takes center stage: soft crust, generous crust edges, and carefully sourced ingredients. The menu also features Apulian burrata , fresh pasta, antipasti, and traditional desserts.
The experience goes beyond what’s on the plate. The three restaurants foster a warm atmosphere with their open kitchens, large glass walls, and lively terraces. A true invitation to la dolce vita in the heart of Bordeaux.
With Ivan Alliata’s victory, Monzù adds another prestigious achievement to its history. This award confirms the restaurant’s expertise and offers an excellent excuse to go try the creations of the new French Pasta Champion.
