Imagine dining at a bistro in the middle of a park! That’s what Pampa offers— a contemporary French bistro that just opened a few minutes from downtown Bordeaux. The restaurant is housed in a restored historic estate and opens onto a stunning wooded park. Its charming vegetable garden and terrace perfectly complement this idyllic setting. With seasonal, homemade cuisine, this is a new spot worth discovering.
A one-and-a-half-hectare park as a backdrop
Once a bourgeois estate, later transformed into a place of learning and communal living, the property where Pampa has set up shop is over 150 years old. Redesigned to house the bistro, it has nevertheless preserved its architectural and botanical heritage. The park covers 1.5 hectares, making it the city’s largest private park. Centuries-old trees, a natural stream, and a vast vegetable garden provide the backdrop for this new venue.
For the curious, a biodiversity trail helps identify the plant species present and understand the connections between flora and fauna. And don’t be surprised if you come across some sheep! Two Ouessant sheep have recently joined the property, where they peacefully maintain the lawns through eco-grazing.
Cuisine inspired by the vegetable garden

In the kitchen, Gaëtan Briand offers a deliberately limited menu that follows the seasons and the vegetable garden. He sources his ingredients from market gardeners in the Gironde, fishermen from Arcachon and the Atlantic, livestock farmers in Nouvelle-Aquitaine, and winemakers in Bordeaux. Several local artisans feature on the menu: Grain for bread, Passion Vins and Château La Maroquine for wines, Moon Harbour for spirits, the Azimut brewery for beers, and Cabane 57 for oysters.
After training under Pierre Gagnaire and then at Sketch in London, the chef went on to develop his own style, traveling from the Vendée to the Basque Country and on to Australia. “I want guests to understand what they’re eating, to feel welcome, and to want to come back,” he explains.
From outdoor movies to yoga starting this spring
Although we’ll have to wait a little longer, the park will host an outdoor program starting this spring. Movies and concerts, large dinner parties under the trees, markets featuring local artisans and farmers, as well as yoga classes and workshops on biodiversity for families.
