It’s an eagerly-awaited competition, bringing together bakers and confectioners with a common goal: to designate the most successful creation. An artisanal, gourmet frangipane cake
After winning several awards in recent years, including Best Croissant (apprentice), 2ᵉ Best Chocolatine 2025 and 2ᵉ Best Galette Briochée in 2024, Boulangerie Paul Merry is adding to its list of honors with this new title. In the image of the house, the award-winning galette is the fruit of a four-handed effort. Paul Merry designs it with his wife, Julie Batista, the pastry chef with whom he works on a daily basis. 100% pure butter, topped with a generous frangipane cream, the galette is made with homemade almond powder and enhanced by Papua vanilla, renowned for its round, slightly chocolaty notes. A recipe that’s precise, balanced and richly flavored.
A bakery committed to the essential
At Paul Merry, artisan know-how goes hand in hand with a strong commitment to quality and ecology. Before opening his own bakery, the artisan refined his approach for several years in an organic bakery in Le Bouscat. It was a decisive experience that shaped his vision of the profession. Opened in 2020 at 210 rue de Turenne in Bordeaux, the bakery now boasts a clear identity. Here, the breads are 100% sourdough, yeast-free, certified organic and take three days to make. Finally, raw materials are carefully selected from local producers and artisans. This daily commitment is reflected in every bite.
